Banana & oats cookies

I know, I know I promised ya some delish overnight oats recipes for today, but in all honesty, I totally forgot to get some fresh fruit yesterday and the weekly shop is planned for tomorrow so erm, soz, not soz - because you’re getting my favourite chunky banana & oats cookie recipe instead! That ain’t a bad deal, is it?

What will you need?
✓ 2 bananas (ripe)
✓ a cup of oats
✓ two tbsp of peanut butter
✓ some cocoa nibs
✓ a little squeeze of honey

These are so quick & easy you won’t even believe it. You throw everything into a bowl, take a fork, mash it all up, scoop it out on a parchment paper and put it in the oven on 180 degrees for 15 minutes. BOOM! Here’s your plateful of delicious (and kinda healthy, depends on how much peanut butter you put in, ha!) banana & oats cookies. They are really gooey in the middle and crunchy on top, mmm! If you want to be really good then replace peanut butter with some healthier option, for instance an organic almond butter or even a homemade cashew butter. And if you want to be extra naughty, add chocolate chips instead of cocoa nibs, ha!
